Spiced Cauliflower Rice

Ingredients:

One large head of Cauliflower

1 tablespoon Coconut Oil

1 Teaspoon Ground Cumin

2 Cloves fresh minced Garlic

Pinch of Salt

Method:

Remove leaves, core and large stalks from one head of cauliflower. Cut into large chunks and blitz in food processor until it turns to crumbs – roughly the size of rice grains. (You can freeze portion sizes at this point if you like).

Next, toss cauliflower rice in 1tbsp coconut oil, one tbsp ground cumin, 2 cloves fresh minced garlic. spread evenly on a baking tray and place in a 200d degree oven for about 14 minutes – check it half way through and give it a stir.

Remove when lightly toasted and golden. sprinkle with salt and add your favourite dahl topping!

For those who want a quick option – you can just microwave the cauliflower rice in a bowl with a splash of water for about 7 mins on high. It works, but does not deliver the same flavour as oven roasted.
